Pumpkin Spiced Oatmeal Muffins Recipe

Pumpkin Spiced Oatmeal Muffins are a great breakfast muffin. Make a batch or two, freeze half and eat the rest. Your home will smell so good while they are baking. This recipe is such a wonderful fall treat.

3 cups of quick-cooking oats
1 cup brown sugar
3 tsp baking powder
1/2 tsp baking soda
2 1/2 tsp cinnamon
1 1/2 tsp ground ginger
3/4 tsp ground cloves
1/2 tsp salt
1-15 ounce of canned pumpkin
4 eggs
2 tsp vanilla extract
1 1/2 cups milk
2 tbl butter, melted

Place the oats, brown sugar, baking powder, cinnamon, ginger, cloves and salt in a large mixing bowl and stir together until evenly mixed.

In medium-sized mixing bowl, whip the eggs with a fork until evenly mixed and add the milk, melted butter, canned pumpkin and vanilla extract. Stir until the mixture is uniform.

Combine the wet ingredients with the dry ingredients and stir until well mixed.

Spoon the muffin batter into cupcake papers in muffin tins; taking care to fill them no more than 3/4 full. Bake at 350 F for 30 to 35 minutes, or until a toothpick inserted into muffin comes out clean.
